If you have any recommendations for (or warnings against) EU novels about the mirror universe, Trill (I think there's just one book on the subject? it's tentatively on my TBR), or Bajoran religion, those are my major subjects of interest! (Mostly DS9 stuff, I know.)
I mostly read in TOS, but one suggestion (and it may be the one that you already have on your to-read list) is The Lives of Dax. It's an anthology with one story for each of Dax's hosts. It's been a while since I read it, but IIRC there's some Trill worldbuilding, and since Dax has been alive so long, they get to interact with characters from the entire franchise, including, at one point, Spock's granddaddy Skon. *g*
Your passion for the Star Trek novels is absolutely one of the things that finally got me to read one! (Even though I saw that you didn't love this one in particular.) It helped me overcome long-standing reservations.
